EXTREMADURA: FOOD
Extremadura's cuisine is rich and varied as well as sober. The cuisine of this land is often composed of simple recipes, with some influence of the convent kitchen. All these recipes are made with excellent ingredients, fruit, vegetables and fruit trees, olive trees and wheat fields, excellent meats like lamb, or hunting, abundant in this area, such as rabbits, partridges, hares, wild boars, deer among others. The Iberian pig is the most known and popular dish, fattened naturally in the forests of oaks that give the flavor and sweetness so appreciated. Typical dishes of this region highlight the gazpacho Extremadura, zarangollo, Extremadura cooked, stewed lentil soup, partridge, rabbit with rice, crumbs Extremadura, snails in spicy sauce and lizard (Extremadura stew, served served with a thick green sauce made oil, parsley, flour and white wine). The lamb roast, casserole, or "wedding stew" is a perfect example of the cuisine of Extremadura. Mushrooms varied land truffles, wild asparagus, or excellent thistle. Another typical product of Extremadura is the Torta del Casar (yearling sheep cheese and vegetable rennet, indoor thick, simply extraordinary), and cheese cheese from La Serena, Ibores, Gata and goat's Tietar. We can not forget the honey of the land, in its different varieties such as thyme, heather, rosemary, lavender, lime or eucalyptus. As for the desserts highlight perrunillas Caceres, técula Olivença Temecula, bagel chips, chula de Caceres (elongated single bar fluffy crumb and light, firm and golden crust), toffees, nuégados, among many other sweets. Also the fruit is rich in Extremadura and some, like cherries Jerte, truly excellent. The melons are sweet and compact, very young and tasty apples, peaches large and aromatic, and figs are so full that sometimes discharged from inside a drop of "honey". In the chapter of the wine, there is a unique designation of origin: Ribera del Guadiana, Spirits (cherry, plum and pear) and fruit liqueurs (cherry, blackberry, plum and raspberry) Valley, Parks.
